It’s that wonderful time again: SPRINGTIME! There are different aspects of every season that I enjoy. Spring always brings the atmosphere of expectancy for me. It’s the time when new life is taking place and it’s exciting! The green grass, buds and flowers give the sense of freedom from being bound to winter (I live in Michigan. We have long winters).
Spring also means bring on the flip-flops and cold drinks - slushies, smoothies and more. I’ve been trying to stay on a healthy eating track this year. I wanted to share a simple recipe for a healthful alternative to enjoy in the place of ice cream.
What I love about this recipe is that there are no added sweeteners, dairy, or fat content; only guilt-free healthiness!
Yield: 2 servings
- 1 frozen banana
- 2 cups frozen strawberries
- Optional - 1 teaspoon lemon or lime juice or 1 drop of lemon, lime or orange essential oil
Pull the fruit out of the freezer and let it sit out on the counter for a few minutes to thaw. Then, throw the ingredients in a blender and blend away. This produces a sherbert-like texture and sweet, cold treat for anytime of the day! Don’t fret if you can’t consume it all at one sitting, simply put it into a freezer-safe container and save until next time.
